FROM MAESTRO MARTINO TO THE 20th CENTURY
Food is an element of social and cultural identity, characterised by choices and preferences that have changed over the centuries. Taste is flavour, an individual sensation, but it’s also knowledge, conditioned by cultural, economic and social situations. Starting from Martino de Rossi, born in the Valley of Blenio in the mid-15th century, active in the main Italian Renaissance courts, considered the first modern cook of history, we shall discover the evolution of taste.
